Product Overview
The key difference between this and other tapioca products is that it does not dissolve instantly. When soaked in liquid (usually milk or coconut milk), the granules swell and become gelatinous while still maintaining their individual "bead" structure.
- Texture: Crunchy when dry, but soft, chewy, and "bouncy" once hydrated.
- The "Clear" Factor: Once cooked or hydrated, the white grains turn translucent.
Key Uses & Recipes
- Bolo de Tapioca (No-Bake Cake): This is the most famous use. It’s a classic Brazilian "icebox" cake made by mixing granulated tapioca with hot milk, coconut milk, sugar, and condensed milk. It sets into a firm, chewy pudding that is served cold.
- Dadinhos de Tapioca (Tapioca Dice): A trendy Brazilian bar snack. The granules are mixed with Queijo Coalho(grilling cheese) and milk, cooled into a block, cut into cubes, and fried. They are crispy on the outside and incredibly "stretchy" on the inside.
- Pudim de Tapioca: A traditional steamed or chilled pudding with a texture similar to "tapioca pearl" pudding but with smaller, more consistent grains.
- Cuscuz Doce: A sweet version of cuscuz made with coconut and these tapioca pearls, very popular as street food in Rio de Janeiro.
